Benches are the workhorses of a commercial kitchen and take a beating every day. Get the construction, depth and configuration right and they outlast most of the equipment that sits on them.
The usual commercial build is a 1.2mm stainless steel top with 3mm backing for reinforcement, a 1.2mm undershelf with top-hat stiffening, and 38mm round stainless tube legs on adjustable disk feet. Simply Stainless benches are supplied flat packed ready for assembly and carry a lifetime warranty on the work benches. Waldorf bench tops are a different build again — a 3.5mm compound work surface on a leg stand or cabinet base, with adjustable feet at the front and rollers at the rear. Depth is the first decision. 600mm suits a prep or plating line where reach matters; 700mm leaves room for equipment to sit on the bench with working space still in front of it. Length is then set by the run you have to fill — benches step up in standard widths, and narrow in-fill pieces are made to close the gap between two pieces of cooking equipment so the line finishes flush.
A bench against a wall wants a splashback to protect the wall and throw splashes back onto the bench; 100mm is the standard height. Sink and dishwasher benches use a wet edge with the same splashback. Free-standing benches need none, but often earn their keep with an undershelf below or an overshelf above.
A standard bench includes one undershelf. Cabinet-base bench tops enclose the underbench space behind a hinged door, or behind a fixed front panel where you want it sealed; leg-stand versions leave it open. Mobile benches run on 100mm swivel castors, two of them locking, for benches that move between sections. Specify on your storage need and on what will sit on top.

Sink benches use fabricated bowls — 450mm x 450mm x 300mm, around 60L, is the standard bowl — with the waste included, in single and double bowl builds at 600mm or 700mm deep. Double sink benches run in standard widths from around 1200mm through to 2400mm, with leg-braced versions where the run is long. Dishwasher inlet and outlet benches are handed for left or right-hand feed, so the bench matches the machine and the direction your team works.
