Choosing a Cake Display Cabinet

A cake display cabinet is a refrigerated merchandiser first and a fridge second. It has to hold 2–8°C without pulling moisture out of buttercream, ganache or fondant, light the product without cooking it, and fit the counter you actually have. Get those three right and the rest is finish.

Sizing — by counter length, not by volume

Cake cabinets are specified by external width because they have to land on a counter run. The common sizes are 900mm, 1200mm, 1500mm and 1800mm — Anvil and Bonvue both run that ladder, so you can match an existing cabinet or plan a full counter in one range. Measure the counter first, then work out how many pieces the shelving gives you. A 900mm cabinet suits a café dessert offer; 1500–1800mm suits a dedicated patisserie or club.

Tiers — presentation vs capacity

Flat-deck and two-shelf cabinets give you fewer, larger pieces at eye level and are easiest to load and rotate. Three- and four-tier cabinets hold significantly more in the same footprint, which suits high-turnover cake service, but each shelf is shallower. If you sell whole cakes and tortes, favour fewer tiers; if you sell slices and individual pastries, favour more.

Glass style and lighting

Curved and square glass both merchandise well; square glass suits a modern fit-out and is easier to clean, curved glass gives a more traditional patisserie look. Look for LED shelf lighting rather than older strip lighting — it runs cooler, which matters when the whole point is not warming the product.

Humidity — the detail most people miss

Standard commercial refrigeration is designed to remove moisture, which is exactly wrong for finished cakes. A cabinet built for patisserie runs a higher, more stable humidity so decorated product doesn’t crack or sweat. If you are displaying finished cakes for a full trading day, this matters more than raw capacity.
