How to Choose the Right Commercial Meat Slicer

A slicer is one of the sharpest and most-handled machines in a commercial kitchen, and it earns its place anywhere sliced meats, smallgoods or cheese go out in volume. Blade size, feed style, drive type and how quickly it strips down for cleaning are the decisions that matter.

Blade diameter

Blade diameter sets the size of product you can slice and how fast you get through it. Smaller blades around 220mm and 250mm suit cafés, sandwich bars and light deli work. 300mm is the general deli standard. 350mm blades take larger product such as whole prosciutto and handle sustained high-volume slicing, but need more bench space.

Feed style: manual, vertical or automatic
