How to Choose a Commercial Induction Cooktop

Induction puts the heat into the pan instead of into the room. The zone senses the pan and only draws power when one is on it, so it responds faster than gas or radiant electric and is easier to work around in a tight kitchen. The first decision is the one this page is split by: a plug-in unit you can move, or a modular top wired into a suite.

Plug-in or modular

Plug-in benchtop cookers usually run on a standard 10A outlet, with the larger ones on 15A, so they can generally go in without an electrician — they suit a service counter, a function, a demonstration bench or a temporary station. Modular cooktops are hard-wired and built into a cooking line, and are the right answer when the top has to sit level with the rest of the suite. Drop-in and recessed plug-in models bridge the two: they are built into a counter, with a stainless trim ring available for a flush finish.

Zones, width and power

Modular tops come in the usual 450mm and 900mm widths, with 400mm and 800mm alternatives, and are laid out in one, two, four or six zones. Zones are typically rated 3.5kW, with 5kW on the heavier ranges. Work back from your pan count at peak rather than from the number of burners you have now — induction recovers heat much faster than gas, so a like-for-like swap often over-specifies.

We do not publish a total connected load for the modular units, and it is not a figure to estimate. Send the spec sheet for the model you are considering to your electrician before you commit, because retrofitting a kitchen for higher current after the fitout is the expensive way to do it.

How it mounts into the line

Modular cooktops are supplied as a bench model that sits on your own benching, on a leg stand, or on a cabinet base that encloses the underbench space. Low back versions are available where the unit sits under a canopy. Settle this with the rest of the suite rather than unit by unit, so heights and finishes line up.

Cookware and pan detection

Induction only works with induction-compatible (magnetic-base) cookware, and pan size matters as much as material: zones are specified for a pan diameter band, broadly 120mm to 300mm depending on the model, and a pan under that band may not be detected at all. Automatic pan detection switches the zone off when the pan is lifted, ceramic glass tops are typically 6mm thick, and power control on each zone is infinitely variable rather than stepped.

If you need an oven under it

An induction range puts the cooktop over an electric convection oven in a 900mm footprint — a 2/1 GN cavity with dual circulation fans, thermostatic control across the usual 50 to 320°C band and several racking positions. It is the efficient buy when floor space is tight, and low back versions are available for under-canopy installs.
