Capacity — sizing by birds per cycle

Duck ovens are rated by how many birds they hold per cycle. A single-burner cabinet holds around a dozen ducks, which suits most restaurants and yum cha kitchens. Match cabinet capacity to your peak roast service rather than your average, and if peak service outruns one cycle, plan the space for a second cabinet at fitout rather than after.

Gas output and connection

Crisp skin needs heat. A commercial duck oven runs a high-output cast iron nozzle burner — the single-burner model we supply is rated at 83MJ — and is available for natural gas or LPG.
