How to Choose the Right Commercial Toaster Grill

A contact grill is one of the highest-throughput machines on a café bench. Work through plate surface, capacity, how the top plate handles thickness, and the circuit it has to run on.

Plate type: smooth, ribbed or combination

Smooth plates cook evenly and clean quickly — the default for paninis, focaccia and pressed sandwiches. Ribbed plates leave grill marks, which suits steak sandwiches, char-marked vegetables and venues where presentation matters. Combination units pair a ribbed top with a flat bottom. Some smooth models accept a set of grill-pattern plates that sit under the grill sheet to produce a crosshatch, and non-stick coatings are widely offered.

Capacity

Presses come as single or double units; a double roughly doubles the cooking surface and usually carries independent heat control for each side, so you can hold two temperatures at once. Grill stations step up to six- and eight-sandwich capacity in one machine and can generally run top-and-bottom or bottom-plate-only. Toaster grillers are rated in slices and offer multiple rack positions. Match capacity to your peak shift, not your daily average.

Hinge and pressure adjustment

A spring-loaded, self-balancing top plate adjusts to whatever thickness goes under it. A counter-balanced top with a load limiter reduces the weight bearing on the food, and some contact grills add user-adjustable plate pressure. A stainless plate spacer holds a fixed gap between the plates, which is useful for delicate products such as croissants.

Power and recovery

The electric grills and grillers here are single phase, generally drawing between about 8.5A and 15A depending on size. Most sit on a standard 10A circuit; larger machines want a 15A outlet, so check the amperage against the circuit before you order rather than after delivery. Gas griddle toasters are the exception — they run a gas burner rather than a power circuit, so allow for the connection.

Smooth plates deliver even cooking, easy cleaning, and consistent presentation — ideal for paninis, focaccia, and pressed sandwiches. Ribbed plates produce visible grill marks for steak sandwiches and char-marked vegetables — preferred where presentation matters. Combination units pair a ribbed top with a flat bottom, as on the Anvil panini presses and the ribbed-top Roband Grillstations. If you only want grill marks occasionally, a set of Roband aluminium grill-pattern plates on a smooth machine will do it without buying a second unit.

Single or twin plate contact grill?

Anvil presses come as single units (340 x 225mm cooking surface) or doubles (480 x 225mm), and the doubles carry independent heat controls for each side. Roband Grillstations are rated at six or eight sandwich capacity in a single machine — so a "6 slice" or "8 slice" figure describes how many sandwiches fit at once, not how many plates the machine has. Woodson and Roband toaster grillers run to four, six, eight and 15 slice. Size on your peak shift rather than your daily average.

What temperature should a contact grill run at?

The units here are thermostatically controlled rather than fixed. The Birko contact grills operate between 60 and 300°C, and the Anvil panini presses are thermostatically controlled up to 300°C. Roband Grillstations use a precise thermostat with even temperature distribution, and the digital-timer models hold four individually adjustable pre-set times up to 10 minutes — which is what keeps different menu items consistent across operators. Set the plate temperature against the product rather than running everything at the maximum.

How do I clean a commercial contact grill?

After each service: scrape plates with a wooden or plastic scraper while still warm, wipe with damp cloth. Daily: deep clean using contact grill cleaner (never abrasive scourers — they damage non-stick surfaces). Weekly: empty and clean the grease box, drip tray and crumb tray, and check the top-plate mechanism for play. Roband PTFE grill sheets are reusable and stocked in 10 packs — they stop food sticking and stop spillage baking on or carbonising onto the plates, and replacing a sheet costs far less than recoating a plate. Annually: certified electrical service inspection.

What's the lifespan of a commercial contact grill?

It depends far more on cleaning and on how the plate surface is treated than on the badge. Non-stick coatings and PTFE sheets are the wear items, and heating elements and top-plate mechanisms are the usual failure points.
